Kind of a random combo, but SO delicious. It had the perfect salty/sweet balance, and an awesome crunchy texture!
For dinner I was craving something peanut-y, so I decided to make my very own peanut sauce! I’ve been making it for quite a while now, and will occasionally make a more involved peanut sauce, but tonight was all about simplicity and speed. I combined a scoop of peanut butter, some soy sauce, some lime juice, a little water, and mixed it until it was all combined. Sorry for the vague measurements, but it’s much more of an eyeball it/taste it type of thing.
I cooked up some whole wheat spaghetti while roasting broccoli, yellow pepper, onions, and carrots. I threw everything into a big bowl, poured the peanut sauce on it, and topped it with some unsalted peanuts and sesame seeds.
This is one of my favorite meals – you really can’t go wrong with peanut sauce!
Now I’m off to pack and hang with my roommates for a bit. I’m trying to get to bed relatively early tonight, because I’m off to Orlando tomorrow at the early hour of 8:00am! My plans include two interviews, a Lake Eola run, catching up with my old neighbors, and LOTS of hang out time with my lovely Steph. I can’t wait!

I actually like taking showers in the dark – don’t know why. Your peanut sauce sounds just fine and dandy. There is no reason to make it more “involved.” Simplicity always counts for something. Looks yummy!
