House Hunters and Alliteration

A little recap of yesterday…

My mom and I had a pretty busy day! We left the apartment around 8:30 to drive  to another part of town to meet the realtor. We ended up looking at six or seven houses, which is exhausting business! We saw some cool ones, including my favorite – a log cabin!!! It felt so home-y and cozy in there, plus it had a fire place that was to die for! Unfortunately, it was right next to a major road and a gas station, which is kind of a no go for real estate. BOO!

On the way back from house hunting, we stopped by the Toyota dealership. As you probably know, Toyota has had quite a few recalls, and my car fell under one of them. We took the letter in and in 40 minutes they had replaced the (potentially) bad part, free of charge! Woohoo!

By the time we got home we were tired and hungry, so as usual, I went with something quick and easy – Pesto Pasta Primavera! (How’s that for alliteration!)

I made some whole wheat noodles while chopping up green peppers and onion. I also threw some frozen peas and broccoli florets into a skillet to cook, and added in some of the leftover roasted cauliflower from Monday night as well. After everything was done cooking, I threw it into a big bowl and coated it with pesto. TaDa! Dinner came together in a little over ten minutes, and tasted fantastic!

Today began with an 8 a.m. wake up call (this is early for me haha) to go on a run with my mom! Well, she was going to walk and I was going to run. We headed over to the trail that is behind the YMCA here, and we were off! I ran around the trail two times (2 miles) and then back tracked for about a half a mile to meet up with mom. We then walked home, so all in all I think I got in about 3 miles of running/walking. Not a bad way to start the day!

When we got back to the apartment, I decided to wash my car (!!!) It was really dusty when we bought it, but now it’s sparkling and beee-you-tee-full!!! LOVE IT!

For breakfast I made a green smoothie with:

  • a large handful of spinach
  • 1/2 cup frozen blueberries
  • 1 frozen strawberry (all that was left Sad smile )
  • 1 scoop chocolate protein powder
  • 1 cup of almond milk

It was very tasty! I’m so happy to have chocolate protein powder back in my life – I definitely prefer it over vanilla!

Now I’ve gotta run because mom and I are going to Target and the mall. What a life! Smile

Busy Bee

I have been busy busy busy lately, packing up my room, hanging with friends, and getting ready to graduate!!!

I had a veggie scramble omelet, which had white cheddar cheese, spinach, red and green peppers, onions in it. I also got some home fries on the side – all of it was great!

Yayyy for graduating! Sorry I’ve been so M.I.A. – I probably won’t be posting much again until after graduation! I’m trying to soak in my last few days of the semester!!!

Guess who is DONE with her undergraduate career??

I could not be more excited! Today was my big presentation for the capstone course for my major – advertising campaigns. I was not personally presenting, but the members of my group that did were fantastic. I am so proud of my team, and loved seeing all of our hard work and late nights pay off!

I had to wake up at 7:30 this morning in order to get to our presentation in time, so a light and quick breakfast was needed!

An apple and peanut butter plus some of my cupcake coffee to wake me up was the perfect combo!

I had class this afternoon, and turned in my final case brief! Now I’m catching my breath for a second before heading out to BallyHoo, which is the restaurant that our advertising client is taking our entire class to to celebrate the end of campaigns! We also find out who “won” so you better believe I’m excited for that! Until later…

This morning I was feeling quite uninspired in the kitchen. I haven’t grocery shopped in a while, and don’t have too many options left. I wound up making a blueberry smoothie, just like yesterday, but still wanted something else. While doing my daily blog reads, I came across this post from Lisa.

Ding ding ding! Egg-spiration hit! I literally rushed out to the kitchen to make these egg muffins immediately.

First, preheat the oven to 350 degrees. For my muffins, I used 4 eggs, a splash of milk, a few shakes of “Italian” seasoning, shredded cheese, spinach, and sweet corn. After beating the eggs together in a bowl, I added in everything else and stirred it all up! Then, I poured the egg mixture into muffin tins – this made 6. I popped them in the oven, and let them bake for about 28 minutes.

These were so good, and really hit the spot! I enjoyed two before putting the rest in the fridge for later. Thanks Lisa!!! Smile

Today I have plans to go to total body at 3:00, as usual. For some reason I am extra excited for class today! I can’t wait to feel the burn, and I think I might even increase my weights some!

After total body, Meghan and I are running some errands, including a stop at super Walmart and the mall! I need to pick up some groceries and toiletries, and then possibly look for a graduation dress, since graduation is now only 15 days away!!! It’s so surreal!

Summer on the Brain

I am happy to report that yesterday’s “clean slate” was a success! I ate plenty of fruits and veggies, went to total body AND yoga, and didn’t have fro yo! Woohoo!

Today I don’t have class until 1:55, so in the mean time I am being a bum. I slept in then chatted on the phone with my mom while attempting to make big life decisions. Where to intern this summer, when to study abroad, WHERE to study abroad, etc. Being that I am the most indecisive person EVER, making these choices does not come easily to me!

To fuel me through my indecision fest, I had a blueberry smoothie in a bowl, 4 large strawberries (which were SO GOOD!), and a graham cracker topped with peanut butter. Mmmmm!


I am SO close to being finished with school! My last class is a week from today, and all I have left is one case brief, a presentation, and an online exam! Summer is so close I can smell it! The (mostly) gorgeous weather isn’t helping my case, I just want to kick off my shoes and run around barefoot on a beach! I’ve been listening to these two songs on repeat – both have summer in the title…both get me PUMPED for the upcoming season…and I LOVE them both! Without further ado:

Off Track

Hey there and happy Wednesday! We’re half way through the week already!

I’ve been feeling a little off the past week or so. After reading and commenting on Meg’s awesome post yesterday, I realized I needed to take my own advice. This is what I commented:

“I do the same thing with guilt tripping myself! I just came off a too-much-fun (impossible) weekend myself, and getting back to reality is a bummer! The fix? I like to just excuse myself, realize it’s FINE to have fun/get off my routine for a hot second, and THEN get back into it, NOW.”

The part that I’ve been having the issue with is the getting back to my routine part. Sure, I still go to total body three times a week, but I can’t even remember the last time I did a good cardio workout and I haven’t gone on a run since I busted my elbow. I’ve been hitting up Mochi and other fro yo places more than I care to admit, and have put less of a priority on making dinner at night. Between school being stressful and having so many birthdays to celebrate, I’ve just gotten a little out of whack.

I’m not trying to beat myself up over this, and it wouldn’t be a big deal at all, except for the fact that I feel blah because of it. My energy levels have gone down and I feel weighed down, which I really attribute to the drop in exercise and not-so-great eating.

I know what I need to do to make me feel great, but for some reason I’ve pushed those things to the side the past week or so. I just need to “get back to it, NOW,” so let’s call today a clean slate, shall we? Smile 

For breakfast, I wanted something light and filling. Smoothie in a bowl + yogurt did the trick!

Today I don’t have class, so I have plenty of time to catch up on life. I have a few assignments to do, a room to clean, and a total body class to attend! Here’s to clean slatin’ it! Winking smile

Soul Surfer

Gooood morning!!! Today the weather here is GROSS – dreary, raining, and BLAH.

Despite the nasty weather, I started my day off right with a big bowl of salty, sweet, crunchy, smooth goodness!

I absolutely love the blend of flavors in this bowl! There was the tart Greek yogurt, the sweet apples and cinnamon, the salty and crunchy pretzel pieces, and the sweet, salty, and crunchy cocoa roast almonds. YUM!

Soul Surfer

On Sunday, Shiv and I went to see the movie Soul Surfer. It is based on the true story of Bethany Hamilton, who lost her left arm to a Tiger Shark while surfing. This was back in 2003, when she was only 13.

I thought this movie was excellent. It was interesting, inspiring, and really helped me put things in perspective. She is such a strong person, and it’s amazing how she has overcome so many obstacles. I highly recommend seeing it, especially if you like motivational movies!

I’ve got to run to a meeting and then class! Time to brave the gross weather…hopefully I don’t melt! Smile with tongue out
