Rain Rain Go Away…

“…that’s what all my haters say.” Anyone? Ok, moving onnnnn…

Today has been a dreary, stormy type of day. The pup and I swam in the pool earlier in the afternoon, but not even 20 minutes after we got in the pool, the storm clouds started rolling in. We were forced to move our little party inside, and have just been hanging out reading and watching TV.

For lunch I was in the mood for a smoothie, so I blended up the following:

  • frozen mango chunks
  • frozen strawberries
  • coconut cream
  • vanilla almond milk
  • banana pudding powder
  • a dash of banana extract

My smoothie was delish, and the coconut cream made it seem tropical and summery! Along with my smoothie I had tortilla chips with cheese melted on them, dipped in salsa.

It was a little random, but just what I wanted!

Now for some adorable pics of my hangout buddy for the day:

Gah, I really can’t get over how cute she is! Open-mouthed smile But she has definitely reminded me that puppies are A LOT of work and a huge commitment! Something to keep in mind when I want to get one of my own…

I’m off to continue my lazy rainy day! Hope everyone is having a superb weekend!

Midnight Fun Run!

Hello all!

I’m making dinner right now, and my book is at (another) really good part, so I’ll make this snappy! Today I had to wake up early to go help with graduation videos for my master’s program. By the time I got home I was EXHAUSTED, so I wound up taking a nice two hour nap. Whew!

After my nap I was huuuuungry, so I threw together a quick snack plate:

It hit the spot! Apple and peanut butter is one of my favorite foods – you can never go wrong with that winning combo!

Right now, this is what’s going on in the kitchen:

I’m keeping it light and easy tonight with a big plateful of veggies for dinner. I’m not even that hungry, because I have devoured 47529082 million of these dangerous things:

GALS 328

Strawberry cookies! I seriously have eaten WAY too many, and feel pretty gross because of it. ICK!

Midnight Fun Run

Every year, my school hosts a Midnight Fun Run, which takes place at midnight on the last day of classes! (That would be today!)

My roommate Ang and I decided to sign up a while ago. For the bargain price of $12, you get a dri fit tee AND free breakfast at the dining hall after the race! I was sold. Plus, I’m pretty excited to run in a race atmosphere, even though it is not competitive in the least.

The race is a 5K, which I think (and hope) is short enough for me to handle. I haven’t run in a whileeee, so anything more than 3 miles would probably be a bit of a struggle at this point.

The timer just went off, so I must go eat my veggies and finish my book! Wish me luck on my race tonight! Smile with tongue out

Excitement’s in the Air!

Sorry I’ve been M.I.A. this weekend! I’ve been busy lazy, and haven’t gotten around to posting! Let’s do a little recap, shall we?

I went to total body, and the class ended up being taught by my favorite instructor! She really kicked my butt, and I loved every second of it! After my workout, me, Meghan, and Ang hit up the mall so I could look for a graduation dress. I looked in a few stores, but nothing stuck out to me, so I’m still dress-less at the moment!

After the mall we ran to Wal-Mart to pick up some necessities. My “necessities” included cucumber melon body wash, apples, cake batter ice cream, and my new favorite purchase – BANANA EXTRACT! I am in L-O-V-E!

As I mentioned before in this post, I am allergic to bananas. Crying face So.Sad. However, I can still eat fake, banana flavored things. Enter banana extract – fake banana flavor in a bottle, and I LOVE it! I’ve been putting in in stuff all weekend, including milkshakes, smoothies, and just plain glasses of milk. YUM.

For dinner we went to one of our favorite local restaurants – Bahn Thai. Meghan and I split an order of the chicken less pad Thai, because their portions are HUGE.

I scarfed down two portions of this + a home made milkshake + a few Oreos. I was kicking myself by the end of the night, because I ended up with a major food baby and a sugar coma. ICK.

Saturday was pretty uneventful. I spent most of the day reading my book, Game of Thrones. It’s getting REALLY good, so I easily lost myself in it for a few hours.

When Ang asked if I wanted to go to the gym, I almost declined in favor of reading. Then I realized I should stop being a bum, and that I would feel much better if I got a workout in, so I went. It ended up being a great workout, and I finally did some cardio! It’s been far too long. I spent 25 minutes working up a sweat on a spin bike, followed by 12 minutes of intervals on the treadmill. I ended with some arm exercises. It definitely felt good to do some cardio!

For dinner, I had leftover pad Thai, roasted broccoli, and grilled red peppers and onions. Three of my absolute favorite foods on one plate? WINNER!

Today was a very exciting day for me!

It started out with some quality reading time, followed by some more errand running with Meghan. While we were out, I made another fantastic purchase….

I was beyond pumped for this thing, and immediately made some iced Chai tea to put in it when we got home. My tumbler and I are already bff’s – it’s loveeeee.

At 7:30, I had an event that I’ve been waiting for for nearly a year now…

The David Sedaris book reading/signing!!!

If you don’t know who David Sedaris is, I highly recommend that you ch-ch-check him out!

My sister got me his book Me Talk Pretty One Day when I was 14, and I have been obsessed with him ever since. He is absolutely hilarious, and I constantly laugh out loud while reading his books.

Anyway. I found out almost a year ago that he was coming to UF on April 17, and was SO EXCITED. I bought my ticket months ago, and have been looking forward to this day. He did not disappoint. He read a few stories from his books, a new story he has been working on, some entries from his personal journal, and then took questions. He was just as hilarious in person as he is in writing, and I loved every second of it! Unfortunately, I did not get him to sign my book after because the line was SO LONG. It’s okay though, because I’m sure I’ll be seeing him read again as soon as I get the chance! Smile

After the book reading, the excitement continued….You see, HBO made a series out of my book! (Game of Thrones) The series started tonight, so as soon as I got home from the reading, I hopped on the couch to watch 60 minutes of non stop drama. There was love, betrayal, beheading, puppies, incest, hot men, and castles. You’re intrigued now, aren’t you?! Winking smile I made my roommates watch with me, and I think they’re hooked!

Oh, one last bit of excitement – my cousin Claire, who recently got engaged, asked me to be a bridesmaid! I was totally not expecting that, but I am so excited and honored that she wants me to be a part of her big day! Of course I said yes! The wedding is not for quiteeee a while (like, 2 years) but I’m still really pumped!

That was officially the longest post EVER, so you get a gold star if you made it all the way through! Hope everyone else had a grand weekend!

Are You Afraid of the Dark?

Is anyone else terrified of being in the bathroom/shower in the dark? Just me? I think I’ve seen far too many movies where things go awry when the lights go out in a bathroom. Psycho shower scene? The Roommate? Need I say more?
Anyway, tonight I had just hopped into the shower when ALL of the lights went out! Of course I screamed and shouted at my roommates like a mad woman telling them to “SAVE ME SAVE ME!” Because obviously, someone was trying to kill me. Or maybe it was just a tripped circuit breaker… ya never know.
My knight in shining armor, Meghan, fixed the circuit breaker and I was back to having light in my shower – whew!
Big-Ass Bowl of Stuff
That is exactly what I had for lunch today! I got home from class around 3:30, and was in the mood to use all of my new fruit that I bought yesterday! Into my big-ass bowl went:
  • plain greek yogurt, sweetened with a squirt of maple syrup
  • chopped apples
  • chopped strawberries
  • cocoa roast almonds
  • pretzel crumbs
  • crushed graham crackers

GINORMOUS bowl of greatness!

Kind of a random combo, but SO delicious. It had the perfect salty/sweet balance, and an awesome crunchy texture!

For dinner I was craving something peanut-y, so I decided to make my very own peanut sauce! I’ve been making it for quite a while now, and will occasionally make a more involved peanut sauce, but tonight was all about simplicity and speed. I combined a scoop of peanut butter, some soy sauce, some lime juice, a little water, and mixed it until it was all combined. Sorry for the vague measurements, but it’s much more of an eyeball it/taste it type of thing.

I cooked up some whole wheat spaghetti while roasting broccoli, yellow pepper, onions, and carrots. I threw everything into a big bowl, poured the peanut sauce on it, and topped it with some unsalted peanuts and sesame seeds.

Peanut-y dinnahh

a little closer now..

This is one of my favorite meals – you really can’t go wrong with peanut sauce!

Now I’m off to pack and hang with my roommates for a bit. I’m trying to get to bed relatively early tonight, because I’m off to Orlando tomorrow at the early hour of 8:00am! My plans include two interviews, a Lake Eola run, catching up with my old neighbors, and LOTS of hang out time with my lovely Steph. I can’t wait!

Does anyone else have big plans for the weekend? Would you FREAK if the lights turned off while you were showering!? 😛

The Best Lunch I Ever Had

Well today’s meals looked like this:

I absolutely LOVE Chai tea!! The first time I had it, about a year ago, I kept raving to my roommate that it was like a treat! And I still feel that way – Chai tea with some milk in it is my usual morning drink.

I also had plain greek yogurt mixed with chocolate protein powder with some almonds on top for a little extra crunch!

But lunch definitely stole the show today…

I used a Thomas Light Multi-Grain english muffin, which has pretty impressive nutritional stats! (100 calories, 5g protein, and a whopping 8g of fiber!) I spread a Laughing Cow French Onion cheese wedge on the muffin, then added my new MorningStar Farms Tomato Basil Pizza Burger, which is vegetarian of course! I topped it off with spinach, onion, and scallions. This meal was SO GOOD! I told everyone I saw for the rest of the day about my deeeelish lunch! I would highly recommend the Tomato Basil Burger, whether you’re vegetarian or not – it was insanely good! I also had an apple to round out my lunch.

Believe it or not I was not too hungry come dinner time, so I kept it simple with some roasted sweet potatos and broccoli

Monster coooookiesss!

I had a few of the cookies that my roommate Meghan’s mom made for dessert. She calls them monster cookies, and they’re monster-ishly good! I believe they have oatmeal, peanut butter, chocolate chips, and mini M&Ms in them! yummm!
