House Hunters and Alliteration

A little recap of yesterday…

My mom and I had a pretty busy day! We left the apartment around 8:30 to drive  to another part of town to meet the realtor. We ended up looking at six or seven houses, which is exhausting business! We saw some cool ones, including my favorite – a log cabin!!! It felt so home-y and cozy in there, plus it had a fire place that was to die for! Unfortunately, it was right next to a major road and a gas station, which is kind of a no go for real estate. BOO!

On the way back from house hunting, we stopped by the Toyota dealership. As you probably know, Toyota has had quite a few recalls, and my car fell under one of them. We took the letter in and in 40 minutes they had replaced the (potentially) bad part, free of charge! Woohoo!

By the time we got home we were tired and hungry, so as usual, I went with something quick and easy – Pesto Pasta Primavera! (How’s that for alliteration!)

I made some whole wheat noodles while chopping up green peppers and onion. I also threw some frozen peas and broccoli florets into a skillet to cook, and added in some of the leftover roasted cauliflower from Monday night as well. After everything was done cooking, I threw it into a big bowl and coated it with pesto. TaDa! Dinner came together in a little over ten minutes, and tasted fantastic!

Today began with an 8 a.m. wake up call (this is early for me haha) to go on a run with my mom! Well, she was going to walk and I was going to run. We headed over to the trail that is behind the YMCA here, and we were off! I ran around the trail two times (2 miles) and then back tracked for about a half a mile to meet up with mom. We then walked home, so all in all I think I got in about 3 miles of running/walking. Not a bad way to start the day!

When we got back to the apartment, I decided to wash my car (!!!) It was really dusty when we bought it, but now it’s sparkling and beee-you-tee-full!!! LOVE IT!

For breakfast I made a green smoothie with:

  • a large handful of spinach
  • 1/2 cup frozen blueberries
  • 1 frozen strawberry (all that was left Sad smile )
  • 1 scoop chocolate protein powder
  • 1 cup of almond milk

It was very tasty! I’m so happy to have chocolate protein powder back in my life – I definitely prefer it over vanilla!

Now I’ve gotta run because mom and I are going to Target and the mall. What a life! Smile

Pesto Pizza

Dinner tonight was yum-my if I do say so myself! Pesto pizza is something me, Meghan, and Claire started making last year, and were slightly obsessed with! It is SO delicious!

Spread the pesto on the pizza crust, then add whatever veggies float your boat! For tonight’s pesto pizza I added green peppers, onions, and spinach.

I also sprinkled on a little of this seasoning that I found in my parents’ pantry:

The next step is pretty crucial – CHEEEEESE! I added mozzarella, but you could add whatever kind of cheese you like.

Finally I tossed it in the oven to bake at 425 for about ten minutes, or until all the cheese was melted and the edges of the crust looked brown.

I roasted the cauliflower at the same time, but put it in first so it could roast for about 25 minutes. To season the cauliflower I put some pesto on it, then sprinkled on salt and pepper.

So. Good. The parents gave it rave reviews as well, but I think they are required to. Winking smile

My mom had the idea to make a special drink to go along with this meal, so I got right on it! In the blender I combined:

  • one cup of water
  • a few handfuls of ice
  • 1/2 cup of lemon juice
  • 8 frozen strawberries
  • a few sprinkles of Truvia sweetener

After blending it all together, we had a refreshing, low cal, summery drink! Perfect!

Since we were being all fancy schmancy, I cut up a kiwi and put a slice on each of our glasses. Presentation is everything! (Please ignore the ugly plug in the back of the picture haha)

I’m off to hang out with my parents – we got the movie State of Play for five bucks at the store today, so I think we’re gonna pop that sucker in! Hope everyone had as good of a Monday as I did! Smile 

Are You Afraid of the Dark?

Is anyone else terrified of being in the bathroom/shower in the dark? Just me? I think I’ve seen far too many movies where things go awry when the lights go out in a bathroom. Psycho shower scene? The Roommate? Need I say more?
Anyway, tonight I had just hopped into the shower when ALL of the lights went out! Of course I screamed and shouted at my roommates like a mad woman telling them to “SAVE ME SAVE ME!” Because obviously, someone was trying to kill me. Or maybe it was just a tripped circuit breaker… ya never know.
My knight in shining armor, Meghan, fixed the circuit breaker and I was back to having light in my shower – whew!
Big-Ass Bowl of Stuff
That is exactly what I had for lunch today! I got home from class around 3:30, and was in the mood to use all of my new fruit that I bought yesterday! Into my big-ass bowl went:
  • plain greek yogurt, sweetened with a squirt of maple syrup
  • chopped apples
  • chopped strawberries
  • cocoa roast almonds
  • pretzel crumbs
  • crushed graham crackers

Kind of a random combo, but SO delicious. It had the perfect salty/sweet balance, and an awesome crunchy texture!

For dinner I was craving something peanut-y, so I decided to make my very own peanut sauce! I’ve been making it for quite a while now, and will occasionally make a more involved peanut sauce, but tonight was all about simplicity and speed. I combined a scoop of peanut butter, some soy sauce, some lime juice, a little water, and mixed it until it was all combined. Sorry for the vague measurements, but it’s much more of an eyeball it/taste it type of thing.

I cooked up some whole wheat spaghetti while roasting broccoli, yellow pepper, onions, and carrots. I threw everything into a big bowl, poured the peanut sauce on it, and topped it with some unsalted peanuts and sesame seeds.

This is one of my favorite meals – you really can’t go wrong with peanut sauce!

Now I’m off to pack and hang with my roommates for a bit. I’m trying to get to bed relatively early tonight, because I’m off to Orlando tomorrow at the early hour of 8:00am! My plans include two interviews, a Lake Eola run, catching up with my old neighbors, and LOTS of hang out time with my lovely Steph. I can’t wait!

Happy Burger + Sweet Potato Fries

On Tuesdays and Thursdays I have class until 8:00pm, which throws off my dinner schedule a bit. Tonight I decided to eat after class, and when I got home I was hungry!

For a quick and easy dinner, I decided on a fake chicken patty “burger” with sweet potato fries on the side.

Sweet potato fries have to be one of my favorite foods! And 99% of the time that I eat sweet potatoes, I eat them as fries. To make them, I cut a sweet potato into wedges, tossed them in olive oil, and sprinkled them with salt, pepper, and paprika. I bake them at 450 degrees for about 20 minutes.

Easy and delicious! I’m off to read and get to bed at a decent hour! Tomorrow is Friday, wooohooo! 😀

Brown Rice Salad

Today’s recipe is one of my very favorites! It doesn’t even require cooking, so you know it’s e-a-s-y!

This tasty concoction is called brown rice salad. My sister actually came up with the recipe, and it has made its way around to all of the women in my family. Everyone we make it for seems to be a big fan, so I think it’s a winner!

You can really add whatever you have on hand to the brown rice salad, but here is my standard recipe:

Cook 4 servings of instant brown rice (2 cups dry). Let the rice cool. Add vegetables, nuts, cheese, and mix everything together! Done-zo!

Okay, I am a horrrrrible recipe writer. I guess I won’t be publishing that cook book anytime soon. 😉 To be more specific, the ingredients I added to the brown rice were:

  • finely chopped green and yellow pepper
  • finely chopped cucumber
  • matchstick carrots
  • chopped pecans
  • chopped walnuts
  • chopped almonds
  • sunflower seeds
  • crumbled feta cheese

That’s it! Just mix all of that into your brown rice and refrigerate. You can eat it plain, or add the dressing of your choice to it. Popular choices include goddess dressing, ranch, and italian!

So there you have it, my very complicated, very secret family recipe! 😉 Seriously though, this stuff is delicious, and pretty darn healthy too!

Book update

I am about to go read my book until I can’t keep my little eyes open anymore! I’m finally getting excited to go read it, which is a relief. I really don’t like when I first start a new book – it always takes me a while to get into it, become invested in the characters, etc. So if you plan to read A Game of Thrones, give it until at least page 60 to get into it. 🙂 Night!
